Basil Macaroni and Cheese


2 cups macaroni
2 cups grated cheese
3 Tbs. flour
3 Tbs. butter
2 cups milk
2 tsp. basil
Salt and pepper

Boil macaroni and drain. Melt butter in a saucepan and add flour and milk slowly. Stir until thickened. Add cheese, basil, and salt and pepper to taste. Mix with drained macaroni and put in a 2 qt baking dish. Bake for 30 minutes uncovered at 350 degrees.


Monterey Spaghetti


4 ounces spaghetti broken into 2 inch pieces
1 egg
1 cup sour cream
2 cups Monterey jack cheese (shreaded)
¼ cup parmesan cheese
1 pkg. (10 oz.) frozen spinach
1 can french fried onions

Cook spaghetti until tender. In a bowl beat egg and add sour cream, Parmesan cheese, and garlic powder. Drain spaghetti, add to egg mixture with jack cheese, spinach and ½ of the french fried onions. Pour into greased baking dish. Cover and bake for 30 minutes at 350 degrees. Top with remaining onions. Return to oven and bake for 5 more minutes


California Blend


2 cups (total) chopped broccoli, cauliflower and carrots frozen or fresh.
1 cup sliced mushrooms
1 cup uncooked rice (not minute rice)
1 can cream of mushroom soup
1 can cream of chicken soup
2/3 can water
1 cup shredded cheese
salt and pepper to taste

Sauté mushrooms until tender. In a large casserole dish mix all ingredients except cheese. Bake at 350 degrees for approximately 1 hour and 15 minutes or until all the liquid is absorbed. Top with shredded cheese at the last 15 minutes.
