Pineapple Ham Bake

2 - 8 ounce cans crushed pineapple, undrained
2/3 cup packed brown sugar
1 Tbs. vinegar
2 tsp. ground mustard
1 lb. Fully cooked ham, cut into bite-sized pieces

Combine the first 4 ingredients in an ungreased 2 qt. Baking dish; mix well. Stir in ham. Bake, uncovered at 350 for 30-40 minutes until heated through. Serve with Rice.


2 Spring Chickens

2 roasting chickens
1 tsp. salt
1 tsp. seasoned salt
1 tsp. celery salt
1 tsp. onion salt
½ tsp. pepper

Wash chicken and pat dry. Place with breast side up in an ungreased 13x9 inch baking dish. Combine seasonings; rub over and inside chickens. Cover tightly and bake at 400 for 1 hour. Uncover and bake for 30 minutes longer or until a meat thermometer reads 180. Serve


Parmesan Chicken

4 boneless skinless chicken breast halves
½ cup seasoned bread crumbs
¼ cup grated Parmesan cheese
½ tsp dried basil
1 egg
1 Tbs. butter
1 Tbs. vegetable oil

Flatten chicken to ¼ inch thickness. In a bowl, combine bread crumbs, Parmesan cheese, and basil. In another bowl, beat the egg. Dip chicken into egg, then coat with crumb mixture. In a large skillet, brown chicken in butter and oil over medium heat for 3-5 minutes on each side or until juices run clear
